Note: This recipe is for 3 bowls
Ingredients
Chicken stock-600 ml
Sliced Onions-2 large
Cheese slices-3
Salt to taste
Sugar-1/2 teaspoon
Butter-1 tablespoon
Method
If you have chicken stock use it otherwise you can make it by boiling chicken with bones in 600 ml of water for at least 7 minutes in a pressure cooker or longer if you are not using one.
In a wok, add the butter and light the fire. As the butter warms up, add the sliced onions and stir well till the onions start browning. Reduce the heat and sprinkle the sugar on the onion. This helps the onions become really nice and brown without burning and getting a nice caramelized taste. Add the chicken stock and the salt and let this mixture boil. Pour into 3 microwavable soup bowls. In each bowl, place a slice of cheese and microwave for 2 minutes. This is done so that the slice of cheese melts yet retains its shape. Our home made variation of French Onion soup is ready.
This recipe tastes really nice with crisp garlic bread.
