Ingredients
Ripe pumpkin-1 kg (all chopped up)
Onion-1 (chopped up)
Garlic-2 cloves
Cinnamon powder-1 teaspoon
Milk-1/2 litre
Water-2 cups
Butter- 1 teaspoon
Salt to taste
Utensil you may use: A pressure cooker, a blender and a vessel
Method
In a pressure cooker, put the butter and add the chopped onions and garlic. Saute till the onion is translucent. Add the chopped up pumpkin and stir well. Add 2 cups of water and bring to full pressure after closing the lid with weight (i.e. when the weight lifts and there is a whistling sound). Reduce the heat to minimum (sim if on gas) and let it cook for 5 minutes. Switch off the heat and let the pressure cooker cool down till the cooker can open on its own.
Put this mixture in a blender and blend well. Strain into a vessel. To this, then add the cinnamon powder, milk and salt and bring to a boil. Switch off the heat and serve. It is suggested that you taste the soup before serving so that you may adjust the salt according to your taste.
Your simple yet exotic pumpkin soup is ready.
You may want to freeze the left over portion of the soup for future consumption.
