How to make the Masala of a Dosa
Ingredients
Potatoes-500 grams
Onion-2 large
Tomatoes-2 large
Haldi (Turmeric)-1/2 teaspoon
Coriander powder-1 teaspoon
Red chilli powder-1/4 teaspoon
Tamarind paste-1/2 tablespoon dissolved in 1/2 cup water
Black Mustard seed-1 teaspoon
Curry leaves-10-12
Salt to taste
Cooking Oil-2 tablespoon
Optional-1/2 cup roasted peanuts
Method
Boil the potatoes. If you use a pressure cooker, it will take about 5 minutes after the cooker comes to a full pressure. Otherwise, ensure that the potato is well boiled. Remove the skin of the potato and cut the potatoes into small bite sizes. Meanwhile, chop up the onions and the tomatoes separately.
In a wok, add the cooking oil and light the fire. Add the black mustard seeds and when it splutters, add the onions. Stir well till the onion turns translucent. Now, add the tomatoes and the curry leaves. Keep on stirring till the tomatoes are almost done. Add all the ingredients EXCEPT THE TAMARIND PASTE and stir for a little while longer. Now, add the potatoes and mix well. Then add the tamarind paste. The water in the paste will help the whole mixture blend well. Some potatoes will get smashed in the process but it adds to the taste. Now, add the roasted peanuts if you want to make it crunchy.
Your dosa filling is ready. Make it in advance so that you can have it as soon as your hot dosa is ready.
