A post on chicken sandwich? I am sure most of you must be wondering what such a post is doing in a cooking website known to display its culinary skills. It is true that making a chicken sandwich hardly requires any technical skill or competence and was once, or is, still considered as the food for the lazy.  
But guess what? Most businesses from large scale multi-national companies like Subway, Mc Donald’s and Burger King to small time Delis are making multi-million dollar profits by selling sandwiches!! The result is that the biggest victim is the common man. Most businesses use refined flour or deep fried processed meat which is really high in calories and low in nutrition. No wonder that Mc Donald’s has been sued for making people obese. 
This also proves that people in the industrialised world have stopped making even sandwiches at home! People prefer nowdays to buy sandwiches for breakfast, lunch or dinner!! 
This post is about making your own chicken sandwich at home and that too in a delicious manner by adding some mayonnaise (low fat if you like it that way) and Dijon mustard. Also add your favourite salad.

 

 

Ingredients

Boiled shredded chicken-100 grams
Mayonnaise-1 tablespoon
Dijon Mustard-1/2 teaspoon
A sprinkling of salt and powdered sugar
Bread-2 slices of your choice
Lettuce, tomatoes, cucumber or any other salad of your choice-Optional

 

Method

If you have boiled chicken for any dish like chicken in white sauce, breaded baked chicken, cold chicken or chicken soup, then you may keep some shredded chicken away for making a delicious sandwich. Mash the chicken well with a tablespoon of mayonnaise and Dijon Mustard. Now, sprinkle a pinch of salt and 1/4th teaspoon of powdered sugar.
Spread this mixture on a slice of bread with salads of your choice. Cover with another slice of bread and cut into two triangles.
