Besan Halwa Recipe: the Classic Indian Dessert
Besan Halwa (Chickpea flour dessert) is a dessert which is fit for the gods, literally, and so is offered quite frequently in temples.
Ingredients
Chickpea flour (Besan)-1 cup
Sugar-1/2 cup
Clarified butter (Ghee)-1/4 cup
Milk-1 cup
Saffron-few strands dissolved in milk
Green Cardomom-2 crushed
Cashew nuts-25 grams (1oz) (1 + 1/2 tablespoon)
Raisins-25 grams (1oz) (1 + 1/2 tablespoon)
Method
In a wok, add the clarified butter and put it on your heat source.
As soon as the clarified butter warms up, add the besan (Chickpea flour) and cashew nuts and stir till all become light brown and give off a lovely aroma.
Do please ensure that you don’t burn the flour!
Add the sugar, milk along with the saffron, the cardamom and raisins to the flour.
Stir well till the dessert (halwa) dries up.
That’s all.
Your Besan Halwa is ready.
